The roe from this finned fish has a small, firm, dark bead with subtle brininess. Found throughout the Southern United States, it serves as a wonderful complement to appetizers. The slight brine and tang of Bowfin caviar is perfect mixed with sour cream, cream cheese, lemon and herbs for a delicious caviar dip.
