- 8 oz Triple cream brie, whole wheel
- 6-8 sheets of phyllo dough
- 5 tbl melted butter
- creme fraiche to serve
- sliced brioche to serve
- 1 oz Hackleback Caviar
Per the instructions on phyllo dough package, it is possible to thaw for two hours at room temperature or overnight in the refrigerator.
Pre-heat oven to 400 degrees and prepare melted butter for assembly. Unfold roll and lay a towel over sheets. A minimum of 10 inch by 10 inch size sheets, whether round or square, is perfect for an 8oz brie wheel. Brush each layer of phyllo with melted butter and layer about 6-8 sheets depending on how thick you want the crust. If you have square sheets, rotate corners 45 degrees for each layer to create a star shape.
Once all the sheets are brushed with butter, lay wheel in the middle. Gently bring up an edge towards the center, tuck and fold around until completely wrapped like a parcel. Brush the outside with more butter. Be sure to place brie into a baking dish or a baking sheet with sides and bake between 15-20 minutes or until golden brown.
Remove from oven and place on serving platter. Toast up some brioche and serve with creme fraiche and Hackleback Caviar either on the side or in the center of your melted cheese. Enjoy!
