Smoked Sturgeon Salad with Apple Alaw & Caviar Vinaigrette
Ingredients
Smoked Sturgeon salad with Apple slaw & caviar vinaigrette
- 8 oz smoked sturgeon
- 4 cups butter lettuce
- 1 apple, peeled, seeded & thinly sliced
- 1/4 cup celery thinly sliced
- 2 Tablespoons crème fraiche
- 1 Tablespoon flat leaf parsley, chopped
- 1/2 teaspoon fresh thyme chopped
- Whisk together crème fraiche, parsley & thyme and toss with apple and celery.
- Season with salt and fresh ground black pepper to taste.
- 1 oz whitefish caviar
- 4 Tablespoons canola or grape seed oil
- 2 Tablespoons champagne vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon truffle oil
- Whisk together oils, vinegar & mustard and fold in the caviar.

Season with salt and fresh ground black pepper to taste
Preparation
Smoked Sturgeon salad with Apple slaw & caviar vinaigrette
Toss butter lettuce with enough vinaigrette to your liking, making sure to scoop up the caviar that may settle to the bottom. Arrange slaw on a bed of lettuce and top with smoked sturgeon. Drizzle remaining vinaigrette over the sturgeon.
