The mildness of whitefish roe lends itself as a great addition to any seafood dish. The firm bead can stand up to heat so toss it in a pasta dish or top it on grilled fish.
SPECIES — Coregonus Clupeaformis. Inhabits the fresh waters of the Great Lakes. Matures 2-3 years, 1-2 feet in length, and 4-5lbs. Wild caught.

Crème by Cat Cora is notable as it is the result of a close collaboration between two female food industry leaders — Cora and California Caviar owner Deborah Keane — who strive to make sustainable caviar an everyday indulgence.
White Sturgeon (Acipenser Transmontanus) is the primary caviar used in both creations and it is sustainable farmed by California Caviar - but in the wild this fish swims along the Pacific Coast of North America and breeds in the fresh water tributaries of the Columbia River and Sacramento Delta. Our Whitefish Roe (Coregonus Clupeaformis) is wild caught, and inhabits the fresh waters of the Great Lakes. It features an iridescent bright golden hue, and has a small, crisp bead with a flavor that is slightly sweet and very clean.

Trained at the Culinary Institute of America and went on to cook at two 3-star Michelin restaurants in France, made television history in 2005, when she became the first female Iron Chef on Food Network’s Iron Chef America. Since then, she shattered the glass ceiling as one of the first females to dominate the historically male culinary industry. Cat has blazed her own trail through the culinary world, becoming the first female inducted into The Culinary Hall of Fame.
She has opened over 18 restaurants worldwide highlighting her platform on health, wellness, and sustainability. She has written three successful cookbooks and a memoir.
