Just in time for holiday entertaining, California Caviar Company has released a new line of custom caviar and roe in partnership with restaurateur, television host, and first-ever female Iron Chef Cat Cora.

“I have such a passion for the art of caviar and have been lucky enough to experience caviars from all over the world. I would like to take this craft and make it available, affordable and delicious for everyone. My specialty line of sustainable, nutritious and flavorful caviars, Crème by Cat Cora, will wow all palates.

    The mildness of whitefish roe lends itself as a great addition to any seafood dish. The firm bead can stand up to heat so toss it in a pasta dish or top it on grilled fish.

    SPECIES — Coregonus Clupeaformis. Inhabits the fresh waters of the Great Lakes. Matures 2-3 years, 1-2 feet in length, and 4-5lbs. Wild caught.

I grew up in a Mediterranean inspired household and health, wellness and sustainability have always been part of my life.

    This caviar has deliciously topped everything from foie gras, to braised abalone, to chocolate mousse and paired perfectly with cabernet sauvignon, beer and of course champagne.

    Acipenser Transmontanous The “white sturgeon” inhabits the Eastern Pacific Ocean from Alaska to the Baja peninsula. Matures 7-9 years, 5-6 ft in length and 80-100lbs.

Crème by Cat Cora is notable as it is the result of a close collaboration between two female food industry leaders — Cora and California Caviar owner Deborah Keane — who strive to make sustainable caviar an everyday indulgence.



The Sturgeon


White Sturgeon (Acipenser Transmontanus) is the primary caviar used in both creations and it is sustainable farmed by California Caviar - but in the wild this fish swims along the Pacific Coast of North America and breeds in the fresh water tributaries of the Columbia River and Sacramento Delta. Our Whitefish Roe (Coregonus Clupeaformis) is wild caught, and inhabits the fresh waters of the Great Lakes. It features an iridescent bright golden hue, and has a small, crisp bead with a flavor that is slightly sweet and very clean.

Trained at the Culinary Institute of America and went on to cook at two 3-star Michelin restaurants in France, made television history in 2005, when she became the first female Iron Chef on Food Network’s Iron Chef America. Since then, she shattered the glass ceiling as one of the first females to dominate the historically male culinary industry. Cat has blazed her own trail through the culinary world, becoming the first female inducted into The Culinary Hall of Fame.


She has opened over 18 restaurants worldwide highlighting her platform on health, wellness, and sustainability. She has written three successful cookbooks and a memoir. If that wasn't enough, Cat started Chefs for Humanity 14 years ago helping to raise funds and provide resources for important emergency, educational and hunger-related causes. In 2018, Cat started her Women’s Empowerment Culinary Internship to mentor, give back and Help women succeed in the culinary arts.


President Barack Obama awarded Cat the President’s Volunteer Service Award and the President’s Lifetime Achievement Award.

Founded by Deborah Keane in 2007, California Caviar Company has been one of the pioneers in the sustainable caviar movement since its launch. The company mindfully raises its own fish near the California Delta, outside of Sacramento, California in addition to sourcing caviar and roe domestically and worldwide. Its products are distributed to notable restaurants and hotels and to gourmet food markets.

Deborah Keane, the first female caviar company owner in the US, is an industry veteran who's been dubbed “The Caviar Queen,” a name she's embraced with a sense of irony given the fact that sometimes the job is far from glamorous, such as when she dons waders and gets in the tanks with the 100-pound sturgeon at her farm.
