lore, this legendary caviar delivers a memorable pop and pronounced
oceanic flavor. Its dark black to golden blond finish, and full size
egg make this osetra a must to experience. The farm raised version
has all the distinctions you would expect from its wild counterpart
without any of the guilt — a medium size egg, refined pop and
mild oceanic finish.
APPLICATIONS —
A sustainable option for the Royal classic. The complexity
yet smoothness with minimal brine makes this caviar best
served simply… a soft blini, lightly toasted brioche
or straight on a pearl spoon.
SPECIES —
Acipenser Gueldenstaedtii. This
wild sturgeon inhabits primarily the Northern Caspian Sea and
the shelf zone of the Middle Caspian, reaching
maturity in 8 to 10 years, with an average length of 4.5
feet, weighing approximately 50 pounds. Its farmed counterpart
from Germany reaches maturity in roughly 6 years and weighs
between 40 to 50 pounds, averaging 4 to 5 feet in length.
