PADDLEFISH — Often described
as having many sevruga-like
qualities, this wild American caviar, also called "spoonbill",
has a small grey bead and sharp, briny finish similar to its distant
Caspian
cousin.
APPLICATIONS —
A perfect accompaniment to fresh oysters and a glass of rosé.
Chefs love Paddlefish for its assertiveness that can stand
up to smoked fish, fried potatoes or use in sauces.
